Amsterdam March 2015 part 1 -Mmm skyscraper I love you!

 Just over a year on and I will finally start this post, So much can happen in the space of a year that you lose track of time. The idea was to head to Amsterdam to see Underworld live at club Paradiso, a great dance act playing a classic album start to finish. It also coincided with a friends 40th birthday, he had the idea the people were invited and I took the opportunity to get away for a break.
 After much planning I had calculated everything I had to pay, it worked out By the time I left I could extend the trip. As it was my first holiday for a while my plan was 1 week in the country, the flights were booked and my Underworld ticket paid off. We all booked up in the Princess Hostel for the first nights, I stayed with this booking as felt I would see where my trip went after as I would be alone from here on in.
 At the time of accepting the invite I was doing well, my job was paying fairly well and regularly. As I have learned from sales jobs, and caused me to escape this cannot always be trusted. Within a few weeks of being paid up an announcement, no longer would I be on a set wage but was now working for commission only. This was going to ruin my plan massively, would I let this ruin my  time?...........................................Of course not!

 So on the 25th March 2015 12:30 I set off on my adventure, with the modern advantage of online check-in Southend airport was no time at all. My plane was all sat and ready for us, a 14:30 departure to get there. With the sound of Underworld - Dubnobasswithmyheadman playing in my ears I'm all set, seeing that plane sitting there getting ready to take us and in line waiting to board.
 
The plane leaves Southend airport speeding up the runway, as it pulls up into the air for our climb I'm engrossed in the music in my ears. The track mmm skyscraper I love you by Underworld, as we climb to the top we are levelling out when I hear the words.

At this point I realise I am now on holiday, I'm leaving the country and in a short time my adventure begins. A short 1 hour later and there I am at Schiphol airport, the plane hits down and slows to gently steer it's way to the end of the journey. Only three hours since I left my house and I have arrived, I have travelled longer to places within the same country yet here I am in Holland arrived in Amsterdam.


 Upon leaving the plane that sense of freedom has hit me, it's time to meet with the group and start the adventure. I had no idea how this was going to go, I had my plan for the first four days, beyond that time was going to be take it as it comes. I meet the group in a bar in Schiphol airport, this is where I met with a group of old and new friends all along for this trip with only one member due to meet us a few days in. A much needed beer to start before we leave the station, into the train station to take us all the way in to daam central station.


 Arrival at the Hotel Princess for a quick check in to the room, it's a quiet room three others sharing but due to leave. A short drop off as tonight is off to see Underworld, essential time needed for at least a beer before the venue is found. Along the streets of Amsterdam setting out to enjoy the main event of the time, walking through the street the changing smells in the air weed, then food, then weed and hash, some food and then, more weed.
 A short walk up the road finds us in Leidseplein, to be more known during the trip as Led Zepplin. Finding many decent bars we find a nice Irish bar, it's known as the Hoopman. Here is where the night begins as we start the drinks and head to Paradiso to see Underworld play the album dubnobasswithmyheadman in full!!

Kuala Lumpar - a raidly growing city

While looking through old photos I remembered an amazing city in a great country i visited a couple of years ago thanks to the blog of +Thiagarajan Subramaniam i recommend heading over and checking his posts out. With this i thought i would share a few of my photos from my time there.

 This is Malaysia i flew in and caught a train straight in to Kuala Lumpar a city in amongst rainforest with buildings towering above me. Here are a few of the pictures of my time in the city, including the Petronis twin towers, views from inside the KL tower, the Petronis F1 car in the entrance of the Petronis building and a few others to show the size of this fantastic city.

 I will find more pictures for a future post as i sort through them.

They are 451.9m high.

Something a little different

 Most of my cooking at home is from Asia, being new years i thought i would do something nice. It's a traditional North Indian korma recipe, i served it with garlic and cashew rice which i will add to the recipe.

Chicken korma

ingredients:

2 tbsp oil (i add 1 tsp of cumin seeds and 2 cloves to infuse in the oil but not essential)
2 large chicken breast fillets cut into chunks
1 clove garlic finely chopped
1 white and 1 red onion chopped (i add the red as my own touch i like the addition but 1 large white will do instead)
1/2" grated ginger
1 green chili
1/2 tsp chili powder
1/2 tsp ground cinnamon
1/2 tsp ground turmeric
1/2 tsp ground white pepper
250g tinned chopped tomatoes
1/2 cup chicken stock
4 tbsp double cream
4 tbsp plain yoghurt

 Heat the oil in a pan and fry the chicken, garlic, and onion until chicken is cooked through.

Add ginger, chili, chili powder, cinnamon, turmeric and white pepper bring to a medium heat. Mix the tomatoes and chicken stock in and simmer.

Stir in cream and yogurt, cook gently for about 5-10 minutes (I'm afraid i can't say times because look and taste determines it for me to know).

Garlic and Cashew Rice

ingredients:

2 cups basmati rice cooked
2 cloves crushed garlic
2 green chillies chopped
4 tbsp cashew nuts (i love these in this so end up putting more in)
2 tbsp oil
salt and pepper to taste

heat the oil in a pan

add garlic and chillies until the garlic is golden, add the cashew nuts and roast for 30-45 seconds

add the cooked rice, add salt and pepper to your taste.


That's it all its very simple to make and i really enjoy it, i enjoy this with fresh naan and homemade chutney but those things take time to make and a few attempts before i got them right. I might add more recipes as i go including the naans breads and chutneys but we will see what inspires me.
